It’s Cake Time!

As Easter is around the corner I would like to share two simple and easy cake recipes you’re going to love!

 

 

“IVY’S FRUIT COBBLER”

You may use any fruit you like, be it Apples, Pears, Peaches, Plums…
Peel and slice the fruit so that it cooks faster.
Stew the fruit in a little water (about a 1/4 cup )
while stewing add a pinch of dry ginger, 1/2 a cup of sugar, a squeeze of lemon juice and 1/2 a teaspoon vanilla essence.
Boil till soft and almost no liquid remains.
Cake batter:
150 gram of margarine or butter (melted)
3/4 cups sugar
1 teaspoon vanilla essence
3 eggs
1 and 1/2 teaspoons baking powder
1 and 1/4 cups all-purpose flour

In an electric mix master or a hand-held mixer,
Beat the margarine (butter) and sugar till creamy
add vanilla and eggs and continue beating, add the baking powder and flour and beat for another minute till all combined.
Grease a baking dish if your choice (around nine inches)
Put the fruit on the bottom of the baking dish and pour the batter over the fruit.
Bake for 1/2 and hour (or until done) in the center of the oven at 350 degrees.

“DOREEN’S FARFEL CAKE”

Ingredients:
4 ounce of margarine (62.5 grams)
4 tablespoons sugar
2 cups all-purpose flour
2 teaspoons baking powder
1 egg
(you may add a tablespoon of water if your pastry is too hard)

Put all the ingredients together in an electric mix master with the dough beater
and mix till the dough comes away from the sides of your bowl.
Form into a ball and wrap in cling wrap.
put the dough into the fridge for an hour or so.
grease a baking dish (I usually use a rectangle Pyrex dish)
Divide the dough into two.
Press one half into the bottom of your dish till it covers the bottom, if you need a bit more , take from the second half.
Spread the Jam of your choice (I use Apricot) all over the bottom
Grate (on the large grater) the rest of the dough all over the top
Bake in the centre of the oven at 350 for 1/2 an hour or until golden on top
